*Coconut Cream Pie




*Ingredients

 °1 cup sweetened flaked coconut
 °3 cups half and half
 °2 beaten eggs
 °¾ cup white sugar
 °½ cup all-purpose flour
 °¼ tsp salt
 °1 teaspoon vanilla extract
 °1 pie crust (9 inches), baked
 °1 cup frozen whipped topping,

*Methods 

Preheat oven 350 degrees F
Spreading coconut on  baking sheet and cook, stir, until golden brown, for 5 ,min.
In  saucepan, blend half and half, eggs, sugar, flour also salt & mix well. Bring to  boil on low heat, stirring constantly. Cooking, stir constantly, for 2 more min. Removing pan from heat & stirring in 3/4 c toast coconut & vanilla extract. Reserve the rest of the coconut to garnish the pie.
Pour filling to pie shell and refrigerate to firm, about 4 h.
Topping with whip top & reserved coconut.
